L’oliveraie

The LOS BARRANCOS estate, where all our production comes from, is located in Sierra de Segura and is made up of century-old olive trees and new plantation olive groves, all of the PICUAL variety and in which there is a plot of organic olive grove .

The harvest, which begins in October, is carried out using traditional methods. The slopes of the land (we must not forget that we are in one of the largest natural parks in Spain) prevent its mechanization.

From this date, first the olives are harvested which will give rise to the Premium extra virgin olive oil of early harvest, then those of organic production and lastly, in December, we finish with the harvest of the olives intended for conventional extra virgin olive oil, Tierras de Tavara Selección.

All the fruits are harvested in flight and in perfect condition, with the only difference that the harvest is carried out according to the different levels of maturation, which are responsible for the different organoleptic characteristics of each of our extra virgin olive oils.
