The oil mill is just over 5 km from the estate, and the grinding is carried out a few hours after the fruit is harvested to ensure that the extra virgin olive oil retains all its characteristics intact.
The production process consists of cold extraction, that is, the temperature of the olive mass never exceeds 27° C. This avoids the evaporation of the volatile substances of the extra olive oil. virgin, those which give it its intense and fruity aromas.
Subsequently, the extra virgin olive oil is filtered to prevent its damage with any type of impurities and is stored in inert stainless steel tanks to ensure its perfect conservation.
Finally, it is bottled and packaged as a preliminary step before shipping to your home.
